Bikini Recipe

Makes enough for 10 servings

For the Clementine Cordial (yields 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Premix (yields 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

Making the Citrus Syrup: Combine all the ingredients in a pan, bring to a light boil, mixing until the sugar dissolves. Then, take off the burner allowing it to reach room temperature completely. Pour to a clean bottle, close it and store chilled, it will last for about one month.

Preparing the Batch Mix: Mix the specified liquid ingredients into a sizeable container, allow it to infuse for one hour, then pass it through preferably using a fine cloth, making it perfectly clear.

When ready to serve: Pour 85ml of your batch mix to a cocktail shaker packed with ice, and agitate gently for one minute until cold. Pour into a frosted cocktail glass or similar, decorate with the cranberries adding the final touch using a brief mist of mandarin oil over the top.
